i have encountered it this way: The Pokemon will continue to try and evolve every level it reaches until it finally reaches level 100, which, traditionally, is the highest level available to be reached. At this point, unless it can be evolved with a stone or place, if it would have to advance one more level to evolve, it wont evolve. So be careful!

The pokemon won't evolve at that level. Next time the pokemon levels up, the evolution sequence will begin again.
There are limited advantages to preventing the pokemon from evolving, such as learning different moves or the same moves earlier. However, the pokemon won't gain the stat boost that occurs after evolution.

You wont be able to evolve it again afterwards. You have to wait until the next Level Up so it will enable the next evolution process.

Well firstly, the pokemon won't evolve ;)
But this also means a few more things:
- Generally, the pokemon will learn their next moves at an earlier level. E.g. Hydropump is learnt by Oshawott at level 43, Dewott at 52, and Samurott at 62
- The pokemon's base stat growth will be more restricted, because it's still an unevolved pokemon. Once you do evolve however, its base stats will automatically adjust to the evolved pokemon.
Whether you let a pokemon evolve or not is up to you - whether you want to learn moves faster or whether you want the pokemon to become stronger immediately.

Your pokemon will not evolve until it levels up again. You can stop the process again if you wish.
