While mining you pick up the dirt/stone/mud blocks. By forming a wall and ceiling as a physical barrier between you and the monsters. To make getting in and out easy, build a door and allow yourself a 4 block space in your wall, to place it.
Occasionally you'll encounter a "Blood Moon" event, where even monsters can open doors. Your best bet at that point? Block yourself in.
