You would have to trade with others...or get the other version yourself and trade and keep tradin and restarting your other copy.

Having two copies of the game and trading the starting pokemon to your main profile then restarting your spare profile will allow you to collect all 3 starter pokemon. You could also just trade with someone else to collect one starter pokemon, then find someone else to trade with so you can get the final starter pokemon.

I started the game, got the starter, traded it to another copy, and restarted two more times to get all of them and go through the early parts of the game with all 3.
