what happens when you collect all the almanac pages in assassins creed 3?

Nothing really happens. Collecting them goes towards the 100% synch of the entire game, also, collecting all of them will unlock every invention recipe which you can craft.. crafting these also goes towards 100% completion.

When you collect all of them you don't get any weapons or quests or anything like that If that's what you meant.
