This is actually an incredibly streamlined process. The first thing you need to do is link your Youtube account to your Rift account in your Rift account settings.

Once your Rift account is linked with your Youtube account, all you have to do is press CTRL+Y (by default) in order to start recording, then CTRL+Y again to stop recording.

After this, the video will automatically encode itself in the background, and when it's done you'll see a button appear in the corner of your screen. Click this, and your video is automatically uploaded to your Youtube account!

Like I said, incredibly streamlined.

Be warned, though, your video will also record whatever audio is going on in the background, such as music or chat programs.

The traditional way for most game video uploads is to record gameplay using FRAPS and then uploading through your Youtube account.

Rift actually has a video capture system built into the game, so Fraps isn't necessary. Any other game I'd completely agree about Fraps though.
