I think I have it sort of figured out... But then water does something crazy and confuses me again. I'm not gonna say what I have figured out already because I just want a complete explanation. Thanks in advance!

Water physics are definitely confusing, and I don't fully understand it myself. I would check out the water article on the minecraft wiki (
http://www.minecraftwiki.net/wiki/Water)
and also the links within that article that link to ladder/elevator tutorials.
Also, you could do a google search for minecraft water physics and maybe find something on the minecraft forums about it.
Hopefully that link helps!

I'm sure the developer is still working on fixing the bugs that sometimes pop up. The physics work slightly different between modes too.

When water is placed on a completely flat area, it will flow 7 blocks in every direction, creating a sort of diamond shape around it. If the water flows down one or more blocks, it will flow out 7 blocks more. Water will flow indefinitely downwards. If you remove the source block from a water flow, the whole flow will disappear. If two water sources are placed with one block of space in between, they will form another water source. There's probably more to it, but that's all I know.

Water flows the opposite direction in where you place it.
