Depends on which platform you playing,for pc it is Escape,also you can remap  the button for pc to whatever button you like.

On PC, simply press the Esc key to bring up a menu.

On consoles, just hit the Start button.

On the PC version you just press the Esc key.On the consoles you simpy press start.

for the pc just press the escape key, if you're playing on a console then press start.

SHIFT-TAB brings up Steam console which also pauses the game.

Start button for consoles, ESC button for PC, Shift + tab will let you access friends, chat, DLC downloads. Don't try doing a ALT+TAB to pause, while playing via steam. It usually crashes, you might lose your saved files.

I think some people  here really didn't understand the question. If a person wants to pause Portal 2 it's because they want a moment to think while the timer is paused. As far as I can tell, it is not possible, at least not on ps3.
