Select that character and force them to use a Quick Stamina potion. You may also check to make sure they don't have useless Sustainables active as those require a reserve of your overall stamina.

Some characters actually have skills that enable them to regain stamina. Rogues, for example, gain a passive ability that allows them to gain a % of their total stamina per hit.

Another helpful way to prevent stamina from draining super quick is to invest your points in passive abilities that reduces a % of stamina requirements for their skills.

Make sure you don't have too many passive abilities on. Tell Varric to use stamina draughts, but make sure he's not getting hit or he'll have trouble taking them. Also, level his stamina up a lot through stats and passive abilities! Varric is (in my opinion) one of the best all around characters in the game from the start, but he is very labor intensive. So make sure to keep checking back with him during combat so he doesn't run out of stamina.

You'd have to use a "Quick Stamina" potion. Or it regenerates over time.
