No, Bianca is glued to him like all the armor of your compain's is glued to them.

No, Varric is permenately equipped with Bianca. However, it will upgrade like other companions armor, so he will never be underequipped.

no, varric can only use Bianca, he can't use any other weapon

Varric is only able to use Bianca so the answer to your question would have to be no.
