As far as I know, slime doesn't have a function in Minecraft, but it eventually may be used for currency.

Not yet, but in the 1.7 update they will be used in sticky pistons

Slime balls, along with a piston create a sticky piston. The sticky piston functions like this: it can attach a block to it (and other pistons) and the block stays, unlike the regular piston, which only pushes a block
